Unfiltered and minimally processed, it captures the brief spring bloom of the white Tupelo tree. The flavor is smooth and buttery with delicate floral notes of jasmine and clover, balanced with hints of dried fruit. Like our California Black Button Sage honey, Florida Tupelo honey is also extremely slow to crystallize, so much so that it will take years.

Most commercially available honey is an agricultural by-product: hives are brought to farms so that the bees can pollinate the crops. Tupelo honey is one notable exception. Tupelo trees grow exclusively in remote wetlands within the Southeastern United States and bloom for only a few weeks out of the year. During this brief window, beehives are placed on tall platforms, several hundred feet in length, and beekeepers move slowly through the riverbed on barges, lifting the hives by hand. All of these factors come together to make Tupelo honey a quite rare and expensive honey.

SERVING SUGGESTIONS:

Best as a finishing honey. Drizzle over ripe pears, fresh ricotta, or warm biscuits, or stir into Greek yogurt or herbal tea where its subtle perfume can show. Works beautifully in vinaigrettes, cocktails, or cheese pairings, especially with fresh chèvre or aged gouda. Use sparingly, the flavor opens fully when not buried under heat or spice.
