KATZ Cucumber, Nectarine and Honey Summer Salad

A visit yesterday into my summer garden yielded some cucumbers, a trip to our Farmers’ Market some nectarines, so I created this simple and tasty summer salad. As with many of our recipes, this is all about the season and the freshest ingredients you can grow or find locally. Feel free to add peaches, plums, or pears, during the fall. A sprinkling of herbs… such as small basil leaves, mint, dill, parsley or chives… would be nice variations. Enjoy!
Ingredients
- 1/4 cup finely sliced red onions*
- 2-3 small cucumbers, sliced into thin half moons or rounds (seeded if bitter)
- 2-3 medium nectarines, sliced into medium thick slices
- ½ cup celery, sliced thinly on the bias
- ½ small head radicchio, cored and torn into small pieces
- ½ cup crumbled goat cheese (can use feta if desired)
- Salt and freshly cracked pepper
Dressing
- ¼ cup KATZ Honey Vinegar (can use KATZ Sparkling Wine Vinegar if you wish)
- 1 tablespoon KATZ Honey
- Salt and freshly cracked pepper
- ¼ cup KATZ Extra Virgin Olive Oil
*Take a tablespoon of vinegar and mix it with the sliced red onion in a bowl, and let sit for 10-15 minutes to get rid of the bitterness.
Directions
Step 1
Whisk together the salad dressing and season, set aside.
Step 2
Drizzle half the dressing over the nectarines, cucumbers, radicchio, and celery and carefully toss together in a shallow serving bowl. Scatter the red onions over the salad, drizzle the rest of the dressing, sprinkle with goat cheese, crack some pepper and serve!
