Harvest Notes from Patrick at Frantoio Grove:
We make this high polyphenol oil from estate grown Frantoio olives. We pick them at the first sign of ripening, then we mill them on site within 90 minutes for freshness, flavor, and balance.
The result is our pride and joy - a vibrant and peppery oil, with notes of herbs, fresh cut grass, and a clean finish. We use this as a finishing oil in our kitchen - it's ideal for drizzling over salads, dipping with bread, or elevating fresh vegetables.
As we continue our journey into regenerative agriculture, we've loved being able to keep offering you the fruits of our labor. Our ongoing efforts to improve the health of our farm ecosystem and build healthier soils continues to pay off. The oils coming from our first days of this year's harvest were some of my (Patrick) favorite oils I've ever milled. Our ongoing goal is to produce robust, high polyphenol olive oils that are deeply aromatic and pungent. This year's oil is a prime example of an olive oil that comes from olives grown in healthy, living soil.
