December's New Oil is here and we are delighted to share it with you. A celebration of the harvest, this oil is lively and vibrant. Enjoy! Shipping December 1st.

Harvest Notes

Our harvest began on October 28^th, a bit earlier than usual. We begin by gathering the mostly still green fruit and some just beginning to show shades of what we call “cherry.” Then they are placed into the waiting bins that will ultimately head to the mill at Frantoio Grove just a few hours later for pressing under the continuing watchful eye of Pat Martin, olive miller extraordinaire!  

The earliest varietal is Favalosa, native to Italy, grown on a trellis system for easier picking. These trees are now 6 years in the ground, and have again produced oil with intense, bright fruitiness and green characteristics that is very high in polyphenols producing that requisite “pungency” we all look for in Olio Nuovo. I should say, I am enamored with this variety and think it continues to produce some very luscious, full-bodied oils…Yay!

But for now, let’s get to what we are here to announce…the blending of the 2025 KATZ December’s New Oil, Olio Nuovo. As always, it is bottled unfiltered, and this year is a blend of 80% Favalosa from the November 4^th pressing together with some lovely green new harvest Frantoio oil from our friends and collaborators at Frantoio Grove. 

The finished elixir does not lack for pungency and intense fruitiness which are the requisite notes for new oil. This year my daughter, Simone, and our 14-year-old granddaughter, Maya, did the honors of tasting and found typical grassiness, with hints of fennel and herbs with a firm backbone and pepperiness in the finish to let you know its freshness!  

Celebrate this year’s release with our tradition of taking a good loaf of rustic style bread, sliced and grilled, slathered in KATZ December’s New Oil with a good pinch of sea salt, and of course, celebrate all this with good friends and family!
