This extra virgin olive oil is made from Taggiasca olives harvested in mid January, a rare harvest window that only opens in cool, slow ripening years like 2024. The result is a soft, gently fruited oil with a smooth finish. This is an old favorite originally created for the chefs at Chez Panisse, who wanted an oil that could carry flavor without overpowering delicate preparations.

We made this small batch in collaboration with Frantoio Grove, reviving a style that was once a quiet staple of California kitchens. It’s ideal for making aioli, summer pestos, vinaigrettes, and dressings, where balance and roundness matter most. Drizzle it over roasted vegetables, fresh tomatoes, or grilled fish, or use it as the foundation for sauces or as a finishing touch for grain salads and composed plates.

This is a limited seasonal release, bottled in small quantities and only available while supplies last.
